This research team of the project TeaStar is focused on the development of innovative, pharmaceutical tea products based on selected teas which are rich in effective and scientifically proven, health promoting substances. In this context, the TeaStar-team focuses on diseases like (intestinal) cancer and diabetes (as well as obesity which is connected to it).
In order to find out which influence single physiological active food ingredients have on the human health, it is necessary to examine the molecular mechanisms by means of adequate biological testing systems and to integrate these findings into the product development process.
To reach its goal, the research group undertakes the following three steps: First of all, a bio-analytical characterization of tea leafs, their ingredients as well as of tea products is made by means of HPLC and other physio-chemical methods. After that, a bio-chemical characterization of the tea leafs, their ingredients as well as of tea products is performed by means of cell- and molecular biological as well as bio-physical methods. The product development itself is based on the findings derived from these analyses, with the focus being directed at the identified potential active fractions.
